The market

The British bread market is the largest single food market with the exception of meat. However, total bread consumption is steadily declining and fell from 51 ounces per head per week in 1956 to 31 ounces in 1979.

Within the overall market structure large white sliced bread is the dominant 'type' of loaf accounting for almost 50% of consumption. However, this sector is in a state of long-term decline. The major area of growth in the last decade has been brown bread which now accounts for 14.5%...
